Quick and Easy Healthy Breakfast

My mornings are insane. I’m usually out the door by 6:30 to train a client, and I am not a morning person. Tying my shoes is a difficult enough task for me in the a.m., never mind assembling a nutritious breakfast. And by the way, cereal is not a nutritious breakfast. Most are overly loaded with carbs, sugars and processed grains and contain little protein.

Scrambled eggs and veggies are a great option, but can take more time than pouring a bowl of cereal or throwing a pop tart in the toaster. So to make sure I eat a healthy breakfast throughout the week, I prepare my eggs on Sunday evening, and just ladle out what I need into a heated pan each day. Easy peasy healthy breakfast in less than five minutes. And this is a great way to get a serving or two of veggies into your body first thing in the morning.

My basic recipe is two whites for every whole egg, and some veggies and protein. Occasionally I will slice up some avocado for the side.

This week I threw together:

12 eggs (4 whole eggs with 8 egg whites)

½ package Soyrizo (ground turkey sautéed in garlic and onion would work fine too)

2 small tomatoes, chopped

1 small onion, chopped

1 clove chopped garlic

2-3 tbsp. salsa

handful or 2 shredded light cheese ( I used soy cheese but you can use whatever kind you like)

½ cup or so chopped frozen spinach

pinch salt and freshly ground black pepper

dash cayenne pepper

dash paprika

 

I put everything into a Tupperware container and just scramble what I need each day.

This was the combo I used this week, but I’ve also thrown in kale, sliced turkey, tofu, turkey bacon, mushrooms, chopped Brussels sprouts, broccoli, scallions etc. Whatever I have in the fridge. Be creative! Happy Health!

  1. What a great idea to prepare it all before the week begins! Sounds yummy too. I’ve been making these super healthy (and gluten free) pancakes in the morning: 2 eggs and a whole banana mixed with a dash of salt, honey and a little bit of almond meal. A little coconut oil in the pan and some Agave Maple Syrup…. mmm 15 minutes tops.
